His culinary lessons on local network stations may have been as much a part of your upbringing as any muppet character. Though Paul Prudhomme’s passing this month is incredibly sad, his fans and lovers of creole cuisine can rejoice! As an homage to the recent passing of beloved culinary icon Paul Prudhomme, Crescent City Grill and Purple Parrot Cafe will be featuring a special menu of Prudhomme’s recipes, prepared by the house chefs with no variance from the original recipes. The menu will include the following Prudhomme classics:
Blackened Redfish with Crabmeat
Veal Grillades & Grits
Pecan Crusted Redfish
Blackened Stuffed Pork Chop
Chef Robert St. John often spoke with Prudhomme, and this tribute menu carries with it a personal acknowledgement of the loss of a great man and chef.
“No one impacted the nation’s regional cooking scene more than Paul Prudhomme,” St. John said. “He was the most underestimated chef in America. He was much more than blackened redfish. Make no mistake, he was the king. He packed more flavor and boldness into a dish that anyone and he was my primary culinary hero.”
